Create a profile for ETS2 in nVidia Inspector and apply these four highlighted settings: Then disable MLAA in ETS2 and (very important) set scaling to 100%! If I use any other scaling setting, FSAA won't work.

The Normal FOV in a single screen setup is 77 degrees and is configurable in the seating adjustment screen. When you go multi screen the horizontal and vertical FOV are set in the config file. The horizontal FOV is set at 50 degrees by default. I believe that number is applied to all 3 displays.
